Ingredients:

  • 4 tablespoons chia seeds (I used Kaizen Living)

  • 1 scoop vanilla protein powder (I used PhD Nutrition)

  • 1 teaspoon Mighty Matcha Tea Powder

  • 1 cup coconut milk (I used The Coconut Company)

  • ½ cup coconut water

  • 1 teaspoon vanilla extract

 

Toppings:

  • Mango chunks

  • Pomegranate seeds

  • Coconut chips


The night before, simply mix the chia pudding ingredients together in a kilner jar. Leave in the fridge. In the morning, give everything a good stir again and add more liquid if it’s too thick. Spoon into a bowl and add your toppings - add whatever you want but this combination works well. Now tuck in!
