Refined sugar free
- 1 ½ teaspoon Mighty Matcha Green Tea Powder
- 1 cup mint leaves
- ½ cup basil leaves
- ½ cup parsley leaves
- 1 clove garlic, finely chopped
- ¾ cup toasted pine nuts
- 2 spring onions, finely chopped
- ½ cup extra virgin olive oil
- Salt & Pepper to taste
- 30 gms grated parmesan
- Combine mint, basil and parsley leaves, along with chopped garlic, spring onion, matcha and toasted pine nuts (leaving a few behind to use at the end) into a food processor. Pulse until well combined.
- Add the olive oil gradually while the processor is running to mix well.
- Add the Parmesan and pulse a few more times.
- Season well with salt and pepper and sprinkle with remaining pine nuts.
